Oktoberfest Potatoes
7 medium red skinned potatoes
1/2 pound bacon, cut in 1 inch pieces
1 medium onion, chopped
1/2 cup vinegar
2 T. cornstarch
1 cup water
1 t. Lawry's seasoned salt
1/2 cup sugar
In large pan, boil the potatoes with their skins on for 20 minutes or until tender. Drain. cool and slice 1/4 inch thick into a 2 quart casserole dish. In medium skillet, fry the bacon until browned.
Drain on paper towels. Remove most of the drippings from the skillet. Sauté the onion in the remaining bacon drippings over medium heat. Add the vinegar, cornstarch, dissolved in water, seasoned salt, bacon and sugar. Cook and stir over medium heat until thickened,3 or 4 minutes.
Pour the sauce over the potatoes and toss. Bake, covered, in a 350 oven for 25 minutes.
