Paula Deen's Sweet Potato Home Fries

This past week or so here at French Fry Diary we have been talking a lot about breakfast potatoes, especially on board the Disney Dream. For Food Network Friday today, I thought I'd share the incomparable Paula Deen's take on breakfast potatoes, with a new twist, she's using sweet potatoes.

Hi Glenn. I recently found your blog while you were on vacation. I never thought about a french fry blog before, but I guess I had a subconcious need for one because I've been following ever since (RSS feed). I have only been following your posts for a couple of weeks so hopefully these aren't repeat questions:

- On the PBS show "America's Test Kitchen" they have a recipe for "Easier French Fries" that has you combine raw sliced potatoes with cold oil, then heat to boiling for 15-20 minutes or until done. That's it. There isn't a two-step process for frying. I've tried them and they come out great. The ATK recipes require an account to view recipes, but just search for "Easier French Fries" and you'll find a blog or two that has the recipe. The ATK recipe has you pour the cold oil onto the raw potatoes but I found that some of the fries stick to the pan/pot that way. I drop the raw potatoes into the cold oil instead, that way they get coated as they sink to the bottom. And they don't stick.

- A couple of weeks ago I went to Red Robin and realized after I placed my order (always a Banzai burger and fries) that they have sweet potato fries now. I only go there a couple of times per year, so they might have had them for a while. They cost a little extra (70 to 80 cents I think,) but I'll probably try them out next time. In case the sweet potato fries are a trial or a regional thing, I'm in the Spokane, WA area.

- If you ever come to Spokane, go to 'Waddell's Pub and Grill'. The best burgers and fries I've ever had. They were on "Diner's, Drive-In's, and Dives" and definitely deserved it! Regular fries, Sweet Potato Fries, and Beer Battered Onion Rings.

- And since you posted a Paula Deen video, here is a little Paula Deen humor.

I'll have to look for that ATK (great show) recipe and give it a try, and I'll try the sweet potato fries at Red Robin next time I go (if they have them in the Philly area).

I'm a big fan of Guy Fieri's Triple D, and have a wish list of places to go when I travel - and Waddell's was already on it before you mentioned it. I'd love to get there someday.
