French Fry Diary 564: 365 Organic Sea Salt Potato Chips
Another last minute impulse buy from Whole Foods, 365 is their store brand snack size potato chips, and comes in a number of varieties, in this case Organic Sea Salt.
The ingredients indicate organic potatoes, sea salt, and a few possibilities of what oil used. According to the bag, these chips are vegan, USDA organic, transfat free, sugar free, but not a low calorie food. Just saying.
These are good solid flat chips, not greasy at all, just could use a little bit more seasoning is all. Maybe I'll try the Sea Salt and Black Pepper flavor next time. Despite it being "not a low calorie food," I think this would be a reasonable choice for looking for a healthier chip, good stuff.

Easy Bacon Potatoes

Here's the recipe for Easy Bacon Potatoes:
Yield : 4 Servings Serving Size : 1/2 cup
Ingredients : 2 c potatoes, peeled and sliced thin (about 4 potatoes), 1/4 c Greek yogurt, 1/2 c Hidden Valley Smoked Bacon Ranch spread, 1/2 tsp salt, 1 spring rosemary, 1/2 tsp rosemary, chopped, 4 slices bacon, cooked and crumbled, 1/4 tsp freshly ground black pepper, 1 c shredded cheddar cheese
Instructions : Fill a large pan with water. salt water and add rosemary sprig. Boil potatoes in water and drain, discarding rosemary sprig. Mix yogurt, spread and black pepper. Fold potatoes into yogurt mixture, careful not to break potatoes. Place in a shallow casserole dish and top with cheese and bacon. Bake at 350 degrees 20 minutes or until hot and cheese is melted.

Lone Star State Fries
Lone Star State Fries are big and spicy, just like Texas, the Lone Star State. Serves: 4
Ingredients: 1 tablespoon paprika, 1 teaspoon chili powder, 1 teaspoon salt, divided, 1/4 teaspoon black pepper, 6 potatoes (about 2-1/2 pounds), with skin on, 2 tablespoons peanut oil
Instructions:
Preheat oven to 425 degrees F.
In a large resealable plastic bag, combine paprika, chili powder, 1/2 teaspoon salt, and pepper. Seal bag and shake to mix.
Cut each potato in half then each half into 4 flat wedges. Add peanut oil and potatoes to seasoning in bag then close tightly and shake to coat well.
Spread potatoes in a single layer on a large rimmed baking sheet. Bake 20 to 22 minutes, or until fork-tender. Sprinkle with remaining 1/2 teaspoon salt and serve immediately.
Notes: Sure, you can peel the potatoes if you want, but we like the extra crunchiness of the skin. Besides, the skin is good for us!
