Pizza Tot Cassarole


Pizza Tot Casserole Recipe

Prep: 10 min. Bake: 30 min., Yield: 6-8 Servings

Ingredients: 1 pound ground beef, 1 medium green pepper, chopped, 1 medium onion, chopped, 1 can (10-3/4 ounces) condensed tomato soup, undiluted, 1 jar (4-1/2 ounces) sliced mushrooms, drained, 1 teaspoon Italian seasoning, 2 cups (8 ounces) shredded part-skim mozzarella cheese, 1 package (32 ounces) frozen Tater Tots

Directions: In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink; drain. Add the soup, mushrooms and Italian seasoning. Transfer to a greased 13-in. x 9-in. baking dish. Top with cheese and potatoes. Bake, uncovered, at 400° for 30-35 minutes or until golden brown. Yield: 6-8 servings.

French Fry Diary 384: Burger King Sweet Potato Fries


I'm not sure if it's just for the summer or for good, but as part of Burger King new fancier fast food initiative, they have introduced, among many other new items (several barbeque sandwiches of beef, chicken and pork, and an already infamous bacon sundae), sweet potato fries.

These sweet potato fries are the same size as their regular fries, only flat, as if cut in half long-wise. Sort of like miniature steak fries and a little like Wendy's fries. I've already mentioned here about my distaste for BK's now not so new fries, but I have to say I wouldn't mind if they came in this sweet potato fry shape. That would be innovative, and probably more enticing and tasty.

They taste good. I was very impressed. I'm not a sweet potato fry guy most of the time, and I thought these were very good. Better than the regular BK fries, and it has to be said, best while hot. As they cooled they were sadly less appetizing. These sweet potato fries are a nice change of pace. I would get them again.

Coney Island Taters

Coney Island Taters
Makes 4 servings

Make quick work of this main dish by using one batch of frozen crumbled meat mixture, made with chopped onion, instead of preparing the ground beef and onion from scratch. You may need to heat frozen crumbles longer than the time cited in the recipe; heat until steamy hot throughout.

1 pound lean ground beef
1 medium onion, chopped
1 cup prepared barbecue sauce
2 large all-purpose potatoes
1/2 cup shredded Cheddar cheese
1/4 cup sliced green onions (optional)

1. In large skillet, brown ground beef and onion over medium heat 8 to 10 minutes or until beef is no longer pink, breaking up into 3/4-inch crumbles. Pour off drippings. Stir barbecue sauce into beef; cover and simmer over medium-low heat 10 minutes.

2. Meanwhile pierce potatoes in several places with fork. Place on paper towel in microwave oven. Microwave on HIGH 10 to 11 minutes or until tender, rearranging potatoes halfway. TIP: Some potatoes may become tender before this – start checking a few minutes before time is up.

3. Cut potatoes lengthwise into quarters. Cut each quarter crosswise in half. Arrange 4 pieces potato on each serving plate; top with beef mixture. Sprinkle with cheese; top with green onions, if desired.
