French Fry Diary 681: Southern Biscuits and Gravy Potato Chips


Just days after I found the first two Do Us A Flavor potato chips from Lay's, The Bride found the other two, also at a Walgreen's. So I guess there'll be no great chase after the final flavor this year, and also, if you're hunting them down - Walgreen's should be your first stop.

Do Us A Flavor 2015 Taste Test #3 - Southern Biscuits and Gravy flavored potato chips, submitted by Hailie Green:

As silly as this might sound coming from someone who likes potato products so much, I'm not a gravy guy. So no gravy on my mashed potatoes, no gravy on my fries, and certainly no gravy on my biscuits. This is why poutine scares me so much, gravy. It's also why I was annoyed at a friend for a while back in the nineties when he put gravy on my fries. Hey, fries are serious business to me.

Biscuits and gravy however, like a Do Us A Flavor finalist from the past, Chicken & Waffles, is a Southern favorite. Although I actually like both chicken, and waffles, I was willing to give these a chance. Then I saw the bag, with that weird white stuff on the biscuits. That's gravy? I thought gravy was brown. Wow, this year's Do Us A Flavor contest is a learning experience...

Once again, the ingredients reveal very little, as the vague and mysterious "Biscuits and Gravy Seasoning" tells us nothing really. The quote from Hailey Green does imply this is her Grandma's recipe however. The aroma when the bag was opened was not bad, but I was stymied by The Bride's reaction after a bite. She wanted to see the bag, "So what are these supposed to taste like?"

I'm not sure if that's a good sign or not. The Bride concluded that they didn't taste like they were supposed to, or maybe she'd never had Southern biscuits and gravy done right. I tried one and got the biscuits taste right away, that flavor was flawless, and then a bit of sour cream. This was a very heavy flavor for a chip.

I would definitely put the Southern Biscuits and Gravy potato chips solidly in second place so far. They are definitely better than the Greektown Gyro, but nowhere near as good as the West Coast Truffle Fries.

French Fry Diary 651: Herr's Cheese Waffles


Okay, we're going off the reservation a little bit here, but I think it's okay because it's a Herr's product, and Herr's makes darn good potato chips, so hang in there.

I've talked about the Jelly Belly effect here before, usually in relation to the more bizarre potato chip flavors in Lay's Do Us A Flavor contests. Jelly Bellys are jellybeans with a variety of odd flavors, many where taste and texture don't match up and don't feel right. For instance, buttered popcorn, bubble gum, and toasted marshmallow are just weird when in the form of a jellybean.

Herr's Cheese Waffles, subtitled 'zesty cheese sandwich snacks' that come in a cheddar flavor, are just such a case. They are crunchy waffle-shaped and cheese-stuff-filled treats that taste exactly like grilled cheese sandwiches. And they are damned addictive. A small snack bag was purchased for the household, and devoured in minutes. What can I say, we do like our grilled cheese around here.

French Fry Diary 637: Hanukkah Latkes 2014


For several years now this well meaning Episcopal husband has tried to make potato latkes for his Jewish wife once a year for Hanukkah. Past attempts have not gone well. Sometimes I get it right, and sometimes it's an epic fail.

This time I tried a new tact. Armed with my new waffle maker purchased earlier in the year that has become my favorite way to make tater tots, I tried to use it for potato latkes.

Taking a mixture of grated potatoes, chopped onions, an egg or two, and a variety of spices, I dropped it on the waffle maker and went to town. Not too shabby, The Bride gave them and me a letter grade of B+. Happy Hanukkah.

French Fry Diary 614: Walkers Ranch Raccoon


Over in the UK, Lay's Potato Chips are known as Walkers Crisps, and they have the Do Us A Flavor contest there too. Several folks, including a recent episode of The Nosh Show (it's also the episode where they try the US DUAF competitors), have brought one of those flavors to my attention.

It's called Ranch Raccoon. Yeah. Let that sink in for a moment all you who thought Cappuccino and Chicken & Waffles were a bit much. Ranch. Raccoon.

Here's how the fine folks at Walkers describe this flavor: "A delicious combination of gamey meat flavour, with accents of sour cream and a garlic kick. They compliment one another beautifully."

The flavor came from the mind of one Robert Gibson, who initially rejected ideas like 'Doughnut Burger,' and decided that if Cajun Squirrel (apparently a real flavor) worked, why not Ranch Raccoon? Wow. I have no words.

Ranch Raccoon is up against some pretty stiff competition in this year's Walkers Do Us A Flavor, including Pulled Pork in a Sticky BBQ Sauce, Chip Shop Chicken Curry, Hot Dog with Tomato Ketchup, Sizzling Steak Fajita, and Cheesy Beans on Toast.

Well, if there's one thing I can say for the Brits, it's at least they had some fun with the contest. And I think it's also worth mentioning that Pickled Onion, Roast Chicken, and Prawn Cocktail are all regular flavors for Walkers Crisps. Would you try any of these flavors?

French Fry Diary 603: Lay's Kettle Cooked Wasabi Ginger Potato Chips


After yesterday's Do Us A Flavor taste test of *gasp* Lay's Cappuccino Flavored potato chips I needed something to get rid of that awful aftertaste. I thought Lay's Kettle Cooked Wasabi Ginger Flavored Potato Chips might be a nice refresher. After all, if my friend and fellow writer Uriah Young digs them, how bad can they be, right?

Wasabi is not an unknown component in enjoyable potato accompaniments. Oh Yoko! in Cherry Hill rocks the wasabi fries, so this could be very good. It's notable that these are one of two of the four flavors that come in an extra special variation - in this case, kettle cooked. I'm not sure why that is in this case, as opposed to the other three flavors.

The image on the front of the bag had me a bit worried as the Cappuccino chips showed exactly what was going on taste wise. I had to wonder if these chips would taste like sushi. I hope not. A glance at the ingredients betrayed no fish, raw or otherwise, but did indicate a couple different kinds of wasabi seasonings, horseradish, and mystery spices. This could be good or bad.

I learned my lesson with the Cappuccino chips, I let The Bride try one first. One bite and she threw out the rest of the chip. Her words were "I like wasabi and I like ginger, but that just doesn't work." I got kinda a sour cream cream vibe with my first taste, and then a slow burn aftertaste that did not go away quickly at all. These weren't bad, and the kettle cook gave them a good crunch at least.

I think the problem is that unlike last year when I definitely would have not only have given Chicken & Waffles and Cheesy Garlic Bread second chances, I would have finished the whole bag - this year that ain't happening so far.

French Fry Diary 577: Charles Chips


I've talked about Charles Chips briefly once or twice before on this blog. They used to be one of my favorite potato chips, especially their barbeque variety. I remember grabbing a snack bag for lunch a few times a week when I worked Pennsauken in the 80s and 90s. At the time I started French Fry Diary however, they were pretty hard to find - only at Cracker Barrel or a mom and pop deli in the same strip mall as Cool Dog Café - and then they vanished altogether.

They're local, out in Pennsylvania, which in my time writing about potato chips, I've learned is where many chips come from. Started in 1942, with the ingenious business model of home delivery in huge cookie tins, they've been doing this for almost three-quarters of a century. The Bride fondly remembers getting those Charles Chips cans just like milk brought by the milkman. However, sadly, just like milk delivery, the chips stopped coming directly to homes in 1974.

The Charles Chips company began to have financial troubles in the 1990s as they were sold several times to various unsuccessful owners who often fell to bankruptcy and other problems. Recipes were changed, distribution suffered, and soon Charles Chips were gone or just about impossible to find. The Scardino family bought the company in 2011 with the intent of online sales and bringing the memorable tins back. So far so good.

Reminiscing recently about milk delivery, and home chip delivery as well, The Bride and I looked Charles Chips up online. We could have gotten three bags - Original, Barbeque, Waffle (rippled) - in a tin for roughly $25 or without for $20. We had no idea what we'd do with the big cookie tin when the chips were finished, so nostalgia aside, we opted for without. And being so close to the factory (in general), there was no shipping fee.

A little less than a week later, our package with. The three nine ounce bags arrived unharmed, marked fragile, and well packed. The bags themselves seemed a bit streamlined from what I remember, but that's okay, I hoped the taste was unchanged. Notably I'd never tried the Waffle chips from Charles before, and their Barbeque was among my favorites. I hoped it was the same.

The Original chips were very simple - potatoes, cottonseed oil, and salt being the only ingredients, so they're all natural and gluten free as it says on the bag. Honestly I remember Charles Chips being a bit bigger and thicker than these. Now they have more of a Lay's feel, but with a much better taste. Honestly though I remember them being great, but these are only just okay.

Next up, I tried the Barbeque chips, and expectations were high, but cautious after my experience with the Original flavor. While these were not the barbeque potato chips from Charles that I remember, these were still quite good. These chips were notably bigger than the ones in the Original bag, and possibly thicker. The flavor was similar to Wise Honey BBQ with just a tad more sweet and honey taste. I liked these quite a bit, but as I said, not the chips I remember at all. I think there's been a recipe change in the intervening years.

The Waffle chips are decidedly thick and excellent for dipping. They are comparable to Lay's Wavy, but better. Yes, it's another Lay's comparison but this one's a good one. I liked these a lot, so it's two out of three, not bad for mail order chips. Maybe next time we will get the tin, and maybe just the Barbeque or the Waffle.

French Fry Diary 517: Ruffles Max Steak Potato Chips


This is the newest in a disturbing trend of meat-flavored potato chips. Some are quite good like the recent Lay's Chicken & Waffles chips, and some are just disasters, and I hate to say it, most of those are steak-based. These chips, fully named Ruffles Max Maximum Taste Flame Grilled Steak Flavored potato chips, hopefully will be different.

My first question is - what's the difference between Ruffles Max, and Ruffles Ultimate? It just seems a bit redundant to me. The bag suggests drinking Pepsi Max with the chips, so maybe that's what the distinction is - marketing.

Looking at the ingredients, other than the mysterious 'flame grilled steak flavoring,' these might be along the lines of a barbecue potato chip. I hope so. With stuff approximating onion, garlic, smoke, brown sugar, etc., it's a good bet.

But I wouldn't take that bet, especially after opening the bag and getting a whiff of the aroma that came out. To say it was unpleasant would be insufficient. To quote The Bride after she got the scent, "It smells like feet." And there you go. Being a good husband, I made her try one first.

Her reaction was scattered. "I suppose it tastes like steak. I don't think it tastes like feet," then to me she said, "you're not going to like them." She went on to say she wished it tasted like well done steak.

I tried one. Surprisingly The Bride was kinda right. They tasted like well done steak, specifically well done steak cooked on an outdoor grill. That is exactly what these chips tasted like. I liked these a lot, and I was very surprised. Yep, I liked them. It's a shame these are only available in a Limited Edition. Get them while you can.

French Fry Diary 479: Lay's Cheesy Garlic Bread Potato Chips


Finally! The other night after a month long search, with friends and family, as well as you fine folks, looking, The Bride finally found a bag of Lay's Cheesy Garlic Bread Potato Chips at an out of the way Wawa. A small bag, mind you, waaay on the bottom shelf, behind a bag of Sriracha chips, almost as if someone had hidden it to save for themselves later. Now, it's mine, all mine... bwahahaha!

I opened the bag with much anticipation, it did not have much of an aroma. The chips were standard thin Lay's and the almost three ounce bag held a sizable portion. Like the Chicken & Waffles chips these have a slow build toward their full taste. Cheesy Garlic Bread is solidly and accurately what they taste like, really good, and strong, cheesy garlic bread.

I was reminded of Texas Toast Four Cheese Garlic Bread, and sure enough, taking a peek at the ingredients, there are several different types of cheese at work here - cheddar, Parmesan, Swiss, Monterey Jack, and Gouda. The Bride thought there was too much of a 'fake' cheese taste to them, like other cheese potato chips. She also wanted more garlic.

These were very good, maybe not as good as I might have anticipated. Granted, there's been a big build up, and not being able to find them, made them even more of a Holy Grail of potato chips. I would definitely get them again.

I'm a bit conflicted as to which flavor I should vote for. The Sriracha is out of the running. The other two are very close... I think the Chicken & Waffles are a bit flavor heavy and sweet, perhaps too much so for repeat eatings. I'm voting for Cheesy Garlic Bread. Which one are you voting for?

French Fry Diary 477: More Pringles Holiday Flavors


We have talked about the Cinnamon & Sugar Potato Crisps from Pringles before. Basically they were just regular Pringles chips with a dusting of cinnamon sugar. I kinda expected the Pumpkin Pie Spice chips to be a similar gig.

As usual, in the cases of strange chip flavors, I made The Bride try one first. Her reaction was "Meh." It was just a chip with pumpkin pie spice dusted onto it. The aroma from the can was spot on, much like a scented candle, but after trying one myself, she had it right. They smell great, but I didn't care all that much for these, and as catastrophically picky an eater as I am, I like pumpkin pie.

The final flavor in the holiday trio that my big sister Bobbie got for me is rather specific - White Chocolate Peppermint. These didn't smell so great. Again, The Bride played guinea pig. Her assessment was that these were two tastes that didn't belong together, and related the experience to taking a bite of chocolate mint, then a Pringles crisp, then repeat.

I felt there were more in line with a bubble gum or buttered popcorn Jelly Belly, or faux beef made from tofu, or more appropriately, Lay's Chicken & Waffles Potato Chips - the flavors and textures just do not go well together. It feels wrong. That said however, I found the White Chocolate Peppermint much tastier and preferable to the Pumpkin Pie Spice.

Maybe Pringles will bring these out again next holiday season, or perhaps some new concoctions. Thanks, Bobbie, for getting these for me!

French Fry Diary 472: Lay's Chicken & Waffles Potato Chips


I still haven't been able to find the Cheesy Garlic Bread Potato Chips. Oh well. Onward and upward. Unlike yesterday's Sriracha chips, the Chicken & Waffles flavored chips at least seem a little more appetizing.

While not something I have ever had, as a catastrophically picky eater, it is worth mentioning I haven't had them together, but I do like both chicken and waffles. And this wouldn't be the first time I've reviewed chicken flavored potato chips either.

Chicken and waffles is a regional and cultural phenomenon that comes in two varieties. The soul food type is fried chicken and waffles drowned in butter and syrup. The Pennsylvania Dutch prefer stewed chicken on a waffle with gravy poured over it. Looking the ingredients, I would say that Lay's chips have more soul. No real chicken though.

When I opened the bag a thick sweet aroma wafted over my nose... molasses? Maple syrup maybe? Color me intrigued. I do like how they smell. It's almost hypnotic, like Cinnabon. Like the Sriracha chips, these were the thin regular chips so typical of Lay's.

The taste. The taste is truly something unreal and unexpected on a potato chip. There is maple syrup, and butter, and waffles, and yes, even chicken. It's all there. Eating the chips I felt like Violet Beauregarde chewing her final piece of gum in the classic Willy Wonka movie. All those flavors are in there. Hopefully I won't be turning into a giant chicken with waffles…

These weren't bad at all, and I definitely ate more of these than I did of the Sriracha chips, but after a while the heavy sweetness got to me. If this flavor wins, it is definitely a once in a blue moon snack. Very heavy.

Now, as soon as I find the Cheesy Garlic Bread potato chips, I'll be back with a review. Until then, does anyone know where to find them in the South Jersey area?

French Fry Diary 471: Lay's Sriracha Potato Chips


We're in the midst of an historic contest from the Frito-Lay folks. They took suggestions, millions of them, for potential new potato chip flavors.

I even tried my hand at it, suggesting Poutine flavored chips to not only cash in on the Canadian market but also appease those folks down here in the US who can't get it of haven't tried it yet. I suppose they either already have that flavor, or they just figured it was too gross. ;-)

The powers that be narrowed the field down to three finalists: Sriracha, Cheesy Garlic Bread, and Chicken & Waffles. Before even tasting, my personal preference would be Cheesy Garlic Bread, that's just a no-brainer. I've even had over twenty folks online tell me they are the better chips.

However, it has been impossible for me to find these things in South Jersey. I'm still looking, and would appreciate any help from my FFD friends out there. Where are the Cheesy Garlic Bread chips?

In the meantime, I did manage to find the other two. First up, Sriracha. For those not in the know, myself included, until I looked it up, Sriracha is a (very) hot sauce made from chili peppers, frequently used with seafood, and named after Si Racha, a city on the coast of Thailand. This soooo doesn't sound like me. I'm afraid of this potato chip.

Upon opening the bag, a spicy not unpleasant aroma hit my nose. Their appearance, other than typical thin regular Lay's potato chips, was that of a simple barbecue chip, perhaps with slightly darker seasoning than usual.

The first chip was good, so was the second, tasting like a spicier than usual BBQ chip... then the afterburn hit. It is a serious heat but it only lasts a few seconds. I was surprised. That was it? Not that I want my mouth burned out, mind you, but I was expecting a bit more fiery punch, you know? These are really not bad at all.
